The owner and the cooking instructor of Koji and More

Founded by Hitomi, born and raised in Japan, our classes focus on the kind of meals we actually eat at home in Japan — simple, nourishing dishes made with seasonal ingredients and time-honored techniques.

Each class is designed to be practical and approachable, while introducing the power of Koji and other fermented ingredients to support everyday wellness.

Whether you’re new to Japanese cooking or looking to deepen your practice, our goal is to help you build healthy, sustainable habits through food.

All classes are hosted through Humanitix, a nonprofit platform that donates 100% of booking fee profits to support disadvantaged children around the world.

To further support this mission, KOJI & More covers 50% of the booking fees — so every reservation contributes to a greater impact.

We believe food should nourish not only ourselves, but also the communities around us.

At KOJI & More, we believe food is more than nourishment — it’s a way to care for ourselves, connect with others, and build a healthier future.

After losing her brother to Colon Cancer, her perspective on food changed deeply. What we eat is not just about taste — it plays a critical role in our gut health and overall well-being.

Today, her mission is to share authentic Japanese home cooking — the kind of meals made for family and everyday life — while bringing back the value of seasonal ingredients, fermented foods, and mindful eating.

Through fermentation and Koji, we aim to help people create simple, nourishing meals that support both gut and mental health.

Our mission is to share the beauty of Japanese food culture with the world, and our vision is a future where more people can live healthier lives — and where preventable diseases like colon cancer are reduced.
