COOKING CLASS DESCRIPTIONS
Onigiri (rice balls) are the heart of Japanese home cooking—a symbol of love, convenience, and comfort. In this hands-on workshop, you won’t just learn to shape rice; you will learn how to elevate this classic snack into a nutrient-dense, gut-healthy meal using our signature Koji seasonings. We are making everything from scratch using Salt Koji, Soy Sauce Koji, and Sweet Koji to bring out incredible Umami flavors without refined sugar. MENU: 1. Hand-Pressed Onigiri (Make 3) You will learn the technique to shape perfect triangles and choose 3 flavors from our 6 gourmet, gut-friendly fillings: 🍙 Wafu Tuna with In-House Mayo & Soy Sauce Koji. 🍙 Steamed Salt Koji Salmon 🍙 Savory Okaka "bonito flakes" 🍙 Sweet Umeboshi (pickled plum) & Shiso Leaf 🍙 Umami Mushroom Miso 🍙 Creamy Avocado & Soy Sauce Koji 2. Sake Lees Tonjiru (Miso Soup) A warming, hearty soup made with root vegetables, pork, and Sake Kasu (Sake Lees). 3. Salt Koji Pickles (served) – Refreshing, lightly fermented seasonal vegetable pickles. 4. Hand-Whisked Matcha Amazake Latte (Iced): Whisk your own premium matcha using a traditional chasen and pour it over a base of Koji Amazake and plant-based milk. STATION SETUP: You will be cooking in teams! Groups of 2–3 will share their own station. Solo attendees* will be paired with a partner. Larger groups (4+) will be split across adjacent stations to ensure everyone has plenty of elbow room to cook! CLASS POLICIES To ensure a safe and enjoyable experience, please review the following class policies - Minimum Enrollment: Classes require at least 6 participants. If a class doesn’t meet the minimum, it will be canceled 48 hours before the start time and a full refund will be issued. - Age Requirement: Participants must be 18 years or older, as classes involve knives and gas stoves. - Group Setup: You’ll always cook with your own partner(s)—never with strangers. Each pair or small group (up to 3 people) shares a workstation. Groups of 4 or more will have additional stations. - Cancellations: Refunds are available if canceled or rescheduled at least 48 hours before the class start time. - Allergies: Ingredients may vary; please confirm allergies before booking.
