All attendees are kindly asked to complete a short online feedback survey after class. ==== Start your morning with the warmth, balance, and nourishment of a traditional Japanese breakfast — reimagined as a cozy 10 AM brunch experience. In this hands-on class, you’ll learn the foundations of Japanese home cooking through dashi-making, steaming techniques, and the transformative power of fermented seasonings like miso, salt koji, and soy sauce koji. And — for those who are feeling adventurous — you’ll also have the option to taste natto seasoned with soy sauce koji & ama koji. It’s a fun, authentic way to experience one of Japan’s most iconic fermented foods, and a powerful boost for gut health. MENU: 1. Miso Soup with Traditional Awase Dashi: A soothing miso soup made with kombu & dried bonito flakes dashi, finished with spinach and mushrooms. 2. Dashi-Maki Tamago (Japanese Rolled Omelet): Fluffy rolled egg seasoned with dashi & koji seasonings, served with grated daikon and soy sauce koji. 3. Steamed Salt-Koji Salmon with Shiso: Tender, umami-rich salmon marinated in salt koji and gently steamed for maximum nutrition and flavor. 4. Steamed Haiga-Mai Rice (served, not cooked in class) : A nourishing, fiber-rich Japanese rice served alongside the meal. 5. Koji Amazake (served, not cooked in class) : A naturally sweet, fermented koji drink topped with optional matcha. ✨ Optional Adventure Bite: Natto with soy sauce koji & ama koji — for guests who want to try a true Japanese superfood! CLASS POLICIES To ensure a safe and enjoyable experience, please review the following class policies BEFORE BOOKING: - Minimum Enrollment: Classes require at least 6 participants. If a class doesn’t meet the minimum, it will be canceled 48 hours before the start time and a full refund will be issued. - Age Requirement: Participants must be 18 years or older, as classes involve knives and gas stoves. - Group Setup: You’ll always cook with your own partner(s)—never with strangers. Each pair or small group (up to 3 people) shares a workstation. Groups of 4 or more will have additional stations. - Cancellations: Refunds are available if canceled or rescheduled at least 48 hours before the class start time. - Allergies: Ingredients may vary; please confirm allergies before booking.
