COOKING CLASS DESCRIPTIONS
WHAT WE'LL EXPLORE 1. Japanese-Specific Vegetables: Daikon, negi, Japanese eggplant, shiso, mushrooms, kabocha, and seasonal produce. 2. Refrigerated Fermented Foods: Miso varieties, Koji products, natto, and other traditional fermented ingredients. 3. Fish Section: Understanding freshness, labeling, and common fish used in Japanese cuisine. 4. Meat Section: Sakura pork, beef selections, and Jidori chicken. 5. Pantry Staples: - Dried ingredients such as shiitake, katsuobushi, kombu - Condiments including soy sauce, ponzu, salt - How to choose dashi products 6. Rice: Different varieties of Japanese rice and how to select the right one for your cooking needs. We will meet at the front of Mitsuwa in Costa Mesa and take a structured 50-minute walk through the store, focusing on essential ingredients used in traditional and modern Japanese cooking. If you have particular ingredients or topics you’d like covered, please email at least 24 hours in advance so I can incorporate them into the tour.
