With this recipe, you’ll turn slightly old sourdough into crispy, flavorful croutons that are both gut-friendly and delicious.   • 4 cups cubed sourdough bread

  • 4 Tbsp olive oil

  • 1 tsp rosemary, chopped

  • 1 tsp thyme, chopped

  • 4 Tbsp grated Parmigiano Reggiano



INSTRUCTIONS |

  1. Place cubed sourdough bread in a large bowl. Add olive oil and herbs, tossing until evenly coated.

  2. Add salt, pepper, and Parmesan. Mix again and spread evenly on a parchment-lined baking tray.

  3. Bake at 350°F (180°C) for 8 minutes. Stir well, then bake for another 8 minutes, or until golden brown and crispy.

  4. Let cool completely before storing in an airtight container.

  • Feel free to swap in your favorite cheese, herbs or add garlic for a different flavor.

  • Always let the croutons cool for at least 2–3 hours before storing, otherwise moisture may cause mold.
