2 tbsp dashi (or preferred dashi)
½ tsp salt-koji
1 tbsp ama-koji
1 tbsp olive oil (for cooking)
Toppings (Optional):
1 shiso leaf
1 tbsp grated daikon
1 tsp soy sauce koji
INSTRUCTIONS |
In a bowl, whisk eggs, dashi, salt-koji, and ama-koji until smooth.
Heat a frying pan with olive oil and spread it evenly with a paper towel.
Test the temperature by dipping chopsticks in egg mixture — if it sizzles, it’s ready.
Pour in ¼ of the egg mixture, cook halfway, and roll.
Repeat 3 more times to create four layers.
Wrap in a sushi mat (or paper towel) and let it rest for 10+ minutes.
Slice into 6 pieces and serve with toppings if desired.
