INGREDIENTS (2 Servings) |

  • 2 fresh eggs

  • 2 tbsp dashi (or preferred dashi)

  • ½ tsp salt-koji

  • 1 tbsp ama-koji

  • 1 tbsp olive oil (for cooking)


Toppings (Optional):

  • 1 shiso leaf

  • 1 tbsp grated daikon

  • 1 tsp soy sauce koji



INSTRUCTIONS |

  1. In a bowl, whisk eggs, dashi, salt-koji, and ama-koji until smooth.

  2. Heat a frying pan with olive oil and spread it evenly with a paper towel.

  3. Test the temperature by dipping chopsticks in egg mixture — if it sizzles, it’s ready.

  4. Pour in ¼ of the egg mixture, cook halfway, and roll.

  5. Repeat 3 more times to create four layers.

  6. Wrap in a sushi mat (or paper towel) and let it rest for 10+ minutes.

  7. Slice into 6 pieces and serve with toppings if desired.
